In case a 7.8, 3 minute quake occurs anytime soon, I would highly suggest that we leave those taco trucks alone.
In the aftermath of the Northridge
quake, these same trucks were one of the few sources for a hot meal for many people. Stores were closed, power was out, and the trucks provided meals for thousands.
A 7.8 would bring more and longer duration power outages, and I can guarantee that these trucks will have lines down the block.

I could be wrong, but I believe they operate on propane. Not only can the propane fuel the stoves but it can also run the refrigeration.

Propane cannot at all run something such as refrigeration. It would deplete the resource within a couple of hours because refrigeration, unlike a propane stove, must be continuously maintained.

In an earthquake, power would probably only be down for a few days, a week at most. This is when the propane could be used to refrigerate the trucks if they are trying to conserve battery power and gasoline.
I'm glad we got that all straightened out.
You know, back when I was doing commercial/residential electrical installation on new buildings and homes, I often had to explain the wonders of propane to my fellow IBEW workers as well.

Leave the Taco Trucks alone. They will feed a lot of people a long time. So will most motor homes if full when the problem occurs.
The refrigerator will operate on 120v, propane, or 12Volt. The cooking gas will work on propane, or microwaves will work on 120V or 12V. Airconditioning will work on 120v or a generator. Most have 40 gallons of water or more.

For those who are sick of TJ coming to their hoods, this is an issue bigger than the propane or not question, and no, I have no doubt that these things wouldn't be sanitary or have any more access to hot food than anyone else. Except that restaurants would have to follow higher standards that they couldn't meet: maybe the answer is to let restaurants serve the food before it spoils with propane stoves, and lack of the refrigeration and water they normally must have.
We fired up the barbecue and cooked food as it was thawing, shared some with neighbors. Then eat the canned food you're supposed to have on hand.

I just saw how it all went down after the Northridge quake. And those catering trucks sure came in handy for a lot of people.
By the way, one of my favorite catering trucks is located near the corner of Santa Monica & Gower. I discovered it while working on a movie for a month across the
street, and it serves some of the best ceviche I have ever tasted.
I think it is still there.

Joe, if you're skeptical of restaurant quality food being served before it spoits, people in the dark, all those same arguments apply to the trucks and more. Which never have to worry about sanitation or lighting. 99% are illegal and unchecked anyway.
Any cred you have left as a community activist is going down, down, fast as a proponent of these roach coaches as saviors of mankind. Sure, you can get a PR job for Reyes, Cardenas and Alarcon this way, but it ain't cool with the majority of residents.
